A Dorchester veteran of 11 years and counting, as Spa Manager Ann Costelloe is responsible for all operations at Dorchester Spa, including overseeing the luxury spa’s £3.2 million refurbishment and launch. She brings a wealth of experience, having worked in the hotel industry from an early age at some of the most exclusive addresses in the UK. Costelloe was previously Guest Services Manager at The Dorchester in 1990 before becoming Manager of The Berkeley Health Club and Spa from 1997 to 2003. Upon moving on to Manager of the Spa and Country Club at Cliveden in Berkshire until 2005, she found her niche specializing in the management of luxury spas. Costelloe returned to The Dorchester as Manager in 2005. A native of London, Costelloe has been working in the hotel industry since she was 18 years old.
As Head Chef of The Grill, Brian Hughson is responsible for all operations of the newly re-launched restaurant. Hughson came to The Dorchester after a turn as opening Head Chef at Rhodes W1, Gary Rhodes’ London restaurant, which was awarded a Michelin star and three AA rosettes within seven months of its debut. He has cooked for HRH Prince of Wales and eminent London restaurants including Pétrus, Rhodes in the Square, Frith Street, 30 St Mary Axe (The Gherkin), the Savoy Grill with Marcus Wareing, and Mirabelle, Belvedere and Wheelers with Marco Pierre White. Hughson cooks with an assured light and clean style focused around the key ingredient of a dish. His new menu updates traditional British dishes with modern presentation using quality ingredients sourced from the British Isles such as beef, lamb, salmon and garden vegetables. Alongside the new dishes, Brian has reinstated classics from the original Grill menu – ‘Dish of the Day,’ for instance – and the traditional salmon carving trolley introduced when The Grill first opened in 1931. Born in Speke, Liverpool, Hughson studied the culinary arts at City of Guilds, Caulden College, Stoke on Trent.
As The Dorchester’s new Director of Food and Beverage, Renaud Gregoire takes the reins of one of London’s most exciting dining and drinking experiences, with responsibility for six restaurants and bars as well as private and in-room dining, catering operations and events. Gregoire joins The Dorchester from Fairmont Towers, Heliopolis, a 5-Star hotel in Cairo, Egypt, where he spent the past 15 months as Resident Manager. Previously, Gregoire enjoyed a seven-year run with Claridge’s in London, starting as Assistant Room Service Manager and ending with three years as Director of Food and Beverage. Other addresses included the Thistle Tower Hotel in London, Le Méridien Waldorf in London, Sheraton Skyline at Heathrow, Dorint Hotel Spa in Belgium, and New York Hotel at Disneyland Paris. Belgian by birth, Gregoire was educated in hotel management at Institut Supérieur de Gestion Hoteliere de Namur in Belgium. He speaks English and French fluently and has a special interest in wine and Champagne.
As The Dorchester’s new Head of Communications, Rosanna Crawley oversees public relations, strategic partnerships and internal communications at the hotel. Crawley also serves as a member of the hotel’s Leadership Committee reporting to Director of Sales & Marketing Louise Smythe. Crawley joined The Dorchester from Mandarin Oriental Hyde Park London, where she served as Director of Communications beginning in 2005. Previously, she spent five years representing clients at London-based communication agencies Mainland PR and Shared Value. Born and raised in London, Crawley received a 2:1 MA honors degree from Edinburgh University in 2000.
